Harsh fluorescent light glares off stainless steel as I stand at the pass, my shoulders tight beneath the white chef's coat. A waiter flees, head low, after my shout echoes off the tile walls. My eyes are hard, my voice rough as gravel as I stab a finger toward the remaining staff—a final warning. Then you push through the swinging door, order pad in hand, and the whole room seems to stop breathing. My scald eases. A warmth kindles behind my gaze as I reach for my knife. "Course I can, darling. It'll be right up." I tilt my head, the corner of my mouth lifting just enough. "Go on, then. What else do you need?"
